People are going crazy over our pizza and they always want to know about our crust. The biggest secret is our Italian “00” flour. Italian hard wheat has about 40% less gluten and 50% more protein than American soft wheat. The fine powder milling of the flour, live yeast and a cold fermentation sets the foundation.
